Zucchini

We have had soooooo much zucchini from our garden. It has been GREAT! We’ve had zucchini bread, zucchini cookies, zucchini muffins, zucchini soup, fried zucchini, zucchini, strata, and I even have tons frozen for making all these goodies during the winter months. My kids love it all. It has been so fun to see them ASK for zucchini cookies. Ammon got home from school and asked for a treat. I told him I had cookies. He said, "They had better be zucchini cookies, cause that’s the only kind I like!" Oh how I love that kid!

We get a knock on our door late one night and this is what we find…

Zuchinni

This is Delila. She is quite pretty. Her toes nails are painted red and she has a few tattoos on her back. The note that accompanied her said add something to her and then pass her on. She also came with these two comics.

Adam and I had seen these comics last week and we laughed. We love Pickles. Then to see them with Delila we laughed even harder.

    That is hilarious. I love Delila! My dad told me stories of how all the families on their block had big gardens, and they would sneak out at night or early in the morning to try and be the first ones to get rid of the veggies that they couldn’t eat. its still happening after all these years. How funny. and I love zucchini cookies. will you share your recipes for some of the zucchini mania?

    Sorry for being to slow Andi, but here is the recipe. Enjoy!!
    Soft Zucchini Cookies
    1/2 c shortening 1 t baking powder
    1/2 c granulated sugar 1/2 t baking soda
    1 c brown sugar 1 t cinnamon
    2 eggs, beaten 1/2 t salt
    3 c peeled, coarsely grated zucchini
    21/2 c flour 1 c shopped nuts
    2 c quick-cooking oatmeal 1 c raisins
    Cream shortening, graulated sugar, brown sugar, and eggs until fluffy: stir in zucchini. Sift flour, baking powder, baking soda, cinnamon, and salt: add to zucchini mixture. Stir in oatmeal until well blended. Add nuts and raisins(we leave these out in my house!). Drop by spoonfuls onto greased cookie sheets. Bake at 375 degrees for 12-15 minutes.
